Ingredients:
- 4 Chicken thighs (with skin, rolled & knotted with lemongrass)
- 200ml Pineapple juice (made with ginger, lemongrass & water)
- 5g Crushed chili
- 5g Sesame seeds
- 2 Garlic cloves
- 20ml Coconut oil
- 1 Cinnamon stick, 5–6 Cardamom pods Curry leaves
- Salt & Pepper to taste
Method:
- Pan-sear chicken until golden and crispy.
- Blend pineapple, ginger, and lemongrass; strain well.
- Fry cinnamon, cardamom, garlic, chili, and sesame in coconut oil.
- Add pineapple juice and reduce to a glaze.
- Coat chicken in glaze and cook for 5 minutes.
