Bring a tropical twist to your dinner table with this Pineapple Glazed Chicken Thigh recipe! Juicy chicken thighs are seared to perfection and coated in a rich, sweet, and spicy pineapple glaze made with ginger, lemongrass, sesame, and a hint of chili.

Ingredients:

  • 4 Chicken thighs (with skin, rolled & knotted with lemongrass)
  • 200ml Pineapple juice (made with ginger, lemongrass & water)
  • 5g Crushed chili
  • 5g Sesame seeds
  • 2 Garlic cloves
  • 20ml Coconut oil
  • 1 Cinnamon stick, 5–6 Cardamom pods Curry leaves
  • Salt & Pepper to taste
Method:
  1. Pan-sear chicken until golden and crispy.
  2. Blend pineapple, ginger, and lemongrass; strain well.
  3. Fry cinnamon, cardamom, garlic, chili, and sesame in coconut oil.
  4. Add pineapple juice and reduce to a glaze.
  5. Coat chicken in glaze and cook for 5 minutes.
Serve with mashed potato and coriander for the perfect finish.
